Summer Berry Punch

 

Summer berry punch is a fizzy, fruity drink made with white grape juice, lemon-lime soda and fresh fruit. Kid-friendly or substitute sparkling wine for an adult version.

During the summer months, we seem to go through a lot of pink lemonade and sweet tea. However, sometimes I like to mix it up. This fizzy fruity punch is delicious on its own and kid-friendly. But if you wanted to take it up a notch and turn it into an adult cocktail, substitute all or part of the Sprite for sparkling wine.

What You Will Need

When you head out to the store, be sure to pick up:

  • 1 (64 oz.) bottle of white grape juice
  • 6 medium fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 2 large apples
  • 2-3 cups lemon lime soda (or sparkling wine)

Cutting the apples into star shapes

I opted to go with a patriotic red, white and blue theme for this punch. Strawberries and blueberries are an obvious choice. But I thought it would be cute to toss in a few apple slices cut into star shapes.

I purchased this set of star-shaped metal cookie cutters. The smallest size, which measured 1.5 inches across, was the perfect size. Instead of cutting the apples into wedges, I sliced from the outside, working my way in, creating rounds. I stopped cutting once I got close to the core because I didn’t want apple seeds in my stars.

Place the apple rounds flat on a cutting board and use your cookie cutter to cut out the center. The hollowed-out apple slice also makes a cute decoration, so feel free to toss both of them into the punch.

If you’re cutting out the apple slices ahead of time, toss them in a couple tablespoons of lemon juice to prevent the slices from turning brown. They should last a few hours in the refrigerator. If serving the punch immediately, the acid from the white grape juice will prevent browning.

Assemble the berry punch

Pour one (64 ounce) bottle of white grape juice into a large pitcher.

Slice six washed and hulled strawberries and add them to the grape juice. Add one cup of rinsed, fresh blueberries.

Cut two apples apples lengthwise into round slices. Cut the apple slices into stars using a 1.5-2 inch star shaped cookie cutter. Add the apples to the pitcher.

Place the punch in the fridge for 2-4 hours to chill.

Right before serving, top with 2-3 cups of chilled lemon-lime soda or sparkling white wine. Stir

Serve chilled over ice.

Ingredients

Instructions

  • Pour the white grape juice into a large pitcher.
  • Add the sliced strawberries and blueberries
  • Cut the apples lengthwise into round slices. Cut the apple slices into stars using a 2-inch star shaped cookie cutter. Add the apples to the pitcher.
  • Chill in the refrigerator for 2-4 hours
  • Right before serving, top the pitcher with the chilled lemon lime soda or sparkling wine. Stir.
