I am officially counting down the days until it’s warm enough to plant a summer garden.

All winter I’ve been staring out my back window across the yard at the abandoned raised beds. They were stripped of their bounty many months ago. All that is left are some rusted tomato cages in a tangled heap and the remants of last summer’s okra plants sticking out of the ground like a shriveled hand reaching for the sky.

Depressing, I know.

But we’ve had a hint of warm weather. The weeds grass is growing — The Husband has already had to mow the yard! Buds are starting to appear on the trees. Now when I look at those empty garden beds, I feel inspired by what we’ll grow in a few months.

This creamy herb dressing has spring and summer written all over it. Fresh dill and parsley are mixed with creamy cool yogurt and sour cream. It’s a great dip for fresh vegetables and perfect for this Black and Blue Steak Salad.

Ingredients

  • 3 green onions white and green parts
  • 1 tablespoon lemon juice
  • ¼ cup fresh parsley chopped
  • 1/4 tablespoons fresh dill chopped
  • ½ cup sour cream
  • 1 cup plain yourt
  • 1 whole clove garlic
  • 3 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  • Combine all ingredients in a blender.
  • Process until thoroughly combined.
  • Serve over salad or with fresh vegetables.
