Y’all, Big Brother goes back to school in a week. I can honestly say I am every bit as depressed about it as he is.

Why is it that on Memorial Day, when you’ve got that delicious anticipation of summer vacation just starting, ten weeks seems like an eternity. Next thing you know, it’s the 4th of July and it’s all down hill from there.

This time next week, it will be back to early mornings, homework, spelling words and racing to get dinner on the table in time to still take baths and get everyone under 10 years old to bed by eight o’clock.

Okay, okay, suck it up, buttercup. I hear ya.

Let’s talk about dinner then, shall we? More specifically, dinner cooked in one pan and ready within 30 minutes. The kind of dinner I have to start making once the daily school grind starts again. Like this recipe for Bacon, Chicken and Mushroom Skillet.

How to Make Bacon, Chicken and Mushroom Skillet

First, chop two chicken breasts into bite-sized pieces. Season them generously with salt and pepper. Set aside.

Next, preheat the oven to 350 degrees.

Then, heat a large ovenproof skillet on the stove over medium heat. Chop about six slices of bacon into medium-sized pieces. Once the skillet is heated, toss in your bacon and give it a good stir. Saute the bacon until it’s cooked through, about 5-7 minutes. Remove the bacon from the skillet using a slotted spoon and drain on paper towels. Reserve the remaining bacon grease in the pan.

If you don’t have enough bacon grease left over to coat the pan, you may have to add a little cooking oil. Add the chicken pieces in batches and brown on all sides. Don’t overcrowd. At this point, don’t worry if the chicken pieces are still a little pink in the middle  after you’ve finished browning them. We will continue cooking them later. Once you’ve brown all the chicken pieces, remove them from the pan and set aside.

Add more oil to the skillet if you need to. Toss in the diced mushrooms. Once they start to release their juice, sprinkle them with salt and pepper. Add the chicken back to the skillet and continue cooking until chicken is no longer pink, about 5-7 minutes. Remove the skillet from the heat, stir in the reserved bacon. Sprinkle everything with shredded cheddar cheese.

Place the skillet in the oven for about 2-3 minutes until he cheese is melted. Garnish with diced green onions before serving.

Not only is this a quick and delicious dinner the whole family will enjoy, but it’s also low carb!

  • 6 slices uncooked bacon
  • 8 ounces white button mushrooms sliced
  • ½ cup shredded cheddar cheese
  • ¼ cup diced green onions

Instructions

  • Chop the chicken breasts into bite-sized pieces. Season them generously with salt and pepper. Set aside.
  • Preheat the oven to 350 degrees.
  • Heat a large ovenproof skillet on the stove over medium heat. Chop the bacon into medium-sized pieces. Once the skillet is heated, add the bacon and stir.
  • Sauté the bacon until it’s cooked through, about 5-7 minutes. Remove the bacon from the skillet using a slotted spoon and drain on paper towels. Reserve the remaining bacon grease in the pan.
  • Add a little additional cooking oil to the pan if you don’t have enough bacon grease left over to coat the bottom of the skillet. Add the chicken pieces to the skillet in batches and brown on all sides, about 1-2 minutes per side. Remove the browned chicken pieces from the pan and set aside.
  • Add more oil to the skillet if needed. Toss in the diced mushrooms. Once they start to release their juice, sprinkle them with salt and pepper.
  • Add the chicken back to the skillet and continue cooking until chicken is no longer pink, about 5-7 minutes.
