Breakfast Casserole

TATER TOT HAM & CHEESE

1 1/2 teaspoons oil 1 large red bell pepper, diced 3 green onions, chopped 16 ounces country ham, diced 8 large eggs 1/2 cup milk 1/2 teaspoon salt 1/4 teaspoon pepper 8 ounces 8-ounce package, shredded  cheddar cheese, divided 32 ounces frozen tater tots

Preheat the oven to 350 degrees F. Heat the oil over medium heat. Add the bell peppers and green onions and saute for 5 minutes or until tender. Add the diced ham and cook until the ham is light pink, about 2 minutes more. Remove the pan from the heat and set aside to cool slightly.

In a large mixing bowl, whisk together the eggs, milk, salt and pepper. Add one cup of the shredded cheese and the entire ham mixture. Stir to combine.

Arrange the tater tots in a single layer on the bottom of a greased 9 x 13 x 2-inch casserole dish. Pour the egg mixture over the top. Sprinkle with the remaining one cup of cheese. Bake for 45 minutes until the eggs are set.
