15ozcan peaches in light syrup, drained, syrup reserved
1/4cupwhite vinegar
1/2cupsugar
12whole cloves
1/4teaspooncinnamon
1cupboiling water
6ouncepackage peach flavored gelatin
3/4cupcold water
Instructions
Coarsely chop peaches. Set aside.
Add enough water to reserved syrup to make ¾ cup. Pour syrup into a medium saucepan.
Add vinegar, sugar and spices. Bring mixture to a boil and then reduce the heat and simmer for 10 minutes.
Strain syrup and discard the cloves Add enough boiling water to the syrup mixture to make 1 cup.
Add gelatin to syrup and stir until gelatin is dissolved.
Add cold water and peaches. Pour gelatin mixture into a mold or individual serving cups.
Allow the gelatin to cool slightly before placing it in the refrigerator. Chill for 4 hours, up to 8 hours.
Notes
Once the gelatin has set, cover the surface with plastic wrap to keep the top from drying out. Keep the jello salad stored in the refrigerator and consume within seven days. This recipe can not be frozen.
