Ingredients

large red bell pepper,

green onions,

ham,
diced

milk

shredded cheddar cheese,
divided

frozen tater tots
Instructions
Preheat the oven to 350 degrees F.
Heat the oil over medium heat.
Add the bell pepper and green onions and sauté for 5 minutes, or until tender.
Add the diced ham and cook until the ham is light pink, about 2 minutes more. Remove the pan from the heat and set aside to cool slightly.
In a large mixing bowl, whisk together the eggs, milk, salt, and pepper.
Add 1 cup of the shredded cheese and the entire ham mixture. Stir to combine.
Arrange the tater tots in a single layer on the bottom of a greased 9 × 13 × 2-inch casserole dish.
Pour the egg mixture over the top. Sprinkle with the remaining 1 cup of cheese.
Bake for 45 minutes, or until the eggs are set.
Notes
You can substitute bacon or sausage for the ham.
For extra flavor, use pepper jack or a blend of cheeses.
Make ahead: Assemble the casserole, cover, and refrigerate overnight. Bake as directed, adding 5–10 minutes if needed.
