Fit the pie crust into a pie plate. Prick the bottom of the crust with a fork. Brush the crust with an egg yolk mixed with a teaspoon of water. Bake at 450 degrees for 9-10 minutes until the crust starts to turn golden brown. Remove the crust from the oven.

Combine the sugar, cornstarch, soda and salt in a medium saucepan. Heat over medium heat until the mixture starts to thicken, about 10 minutes.

Make the filling

Remove the pan from the heat. Add the gelatin and stir until the gelatin is completely dissolved.

Add the sliced strawberries. Pour the mixture into the prebaked pie crust. Chill the pie in the refrigerator until set, four hours minimum but eight hours is best. Serve with whipped cream if desired.
