Ingredients
For the basil cream cheese:
4ouncescream cheesesoftened
4ouncesgoat cheesesoftened
2clovesgarlicpressed or finely minced
3tablespoonschopped fresh basil
4slicescooked baconcrumbled
1teaspoonextra virgin olive oil
Salt and pepper to taste
For the crostini:
1day old baguettesliced
¼cupolive oil
PaprikaItalian seasoning, kosher salt
You will also need:
6-8cherry tomatoesthinly sliced
Instructions
For the basil cream cheese:
Combine all ingredients in a food processor. Process until ingredients are thoroughly combined. Store any leftovers in an airtight container in the refrigerator.
For the crostini:
Preheat oven to 400 degrees.
Arrange baguette slices in one layer on a cookie sheet. Drizzle with half of olive oil.
Sprinkle evenly with the spices.
Bake for 7 minutes. Flip crostini over. Season with remaining olive oil and spices. Bake for another 7 minutes or until crostini is toasted.
To assemble:
Spread about 1 teaspoon of the basil cream cheese on a crostini. Top with a slice of tomato.
