HOW TO MAKE BEIGNETS

Activate the yeast

Dissolve one package of yeast in warm water. Add one tablespoon of sugar. Allow the yeast to sit for 10 minutes to activate.

Heat milk and butter

Heat  1/4 cup of milk and three tablespoons of butter in a small saucepan over medium-low heat.

Combine dry ingredients

Combine 2 1/2 cups of flour and two tablespoons of sugar.

Mix the dough

Mix the yeast with flour, one egg yolk and one teaspoon vanilla. Allow the dough to rise for one hour.

Cut into strips

Cut the dough into 2 x 3-inch strips.

Fry the beignets

Heat 2-3 inches of oil over medium heat. Place 3-4 dough strips at a time into the hot oil and fry for 45 seconds on each side.

Eat and enjoy!

Strain the beignets from the hot oil and place them on a layer of paper towels to drain. Serve hot with powdered sugar.
