Cheesy Ranch

Roasted Potatoes

Ingredients

2 1/2 lbs potatoes 1 package bacon 1/4 cup sour cream

 1 cup shredded cheddar  1/4 cup diced green onions

 1/2 cup ranch dressing  1 teaspoon salt  2 cloves garlic, minced

Parboil the potatoes.

Quarter the potatoes and cover them with water in a large stockpot. Boil 10-15 minutes over medium low heat until tender.

Combine potatoes and garlic.

Layer the potatoes and two taeaspoons of minced garlic into a casserole dish.

Prepare the ranch sauce.

Combine bacon, sour cream, ranch dressing and salt. Pour the mixture over the potatoes. Stir the potatoes to coat.

Top with cheese.

Sprinkle one cup of shredded cheddar over the top. Bake at 375 degrees for 15-20 minutes until the potatoes are tender and the cheese is melted.

Garnish with  green onions.

Serve hot with sliced green onions over the top.
