After posting my recipe for Coconut Lime Icebox Pie, it got me thinking about pie plates. Something other than my standard clear glass Pyrex dishes. When it comes to pie plates, the choices can be overwhelming — glass, ceramic, aluminum, earthenware. What’s the best choice?
Each has its pros and cons. Glass dishes such as Pyrex are the go-to for a reason. They heat slowly and evenly, ensuring a crisper crust. Ceramic dishes, likewise, have similar advantages. Most pie plates measure 8 ½ – 10 inches in diameter and are 1 ½ to 2 inches deep. I prefer deep dish pie plates, only because they prevent spills (like when I’m moving my chocolate meringue pie from the counter to the oven).
