Marinated Cheese

So much planning goes into the holidays. However, if you find yourself in need of an easy, last minute appetizer, this five ingredient marinated mozzarella cheese fits the bill and is delicious to boot.

Use Good Olive Oil

Trust me, don’t try to save a couple bucks and buy the cheap store brand. Cheap olive oil is heavy and has a distinct after taste – to me it tastes a little rubbery. It’s fine for cooking when other flavors are present. In this case, you want the cheese to shine and the olive oil to play a supporting role, not become the only thing you taste. I adore the Tuscan Herb olive oil {not an affiliate link} from J. Olive. I have drunk this olive oil from a shot glass before. It’s that good!

Marinate Overnight

My second tip is to whip this up at least eight hours before you plan to serve, but overnight is best. The longer the cheese sits in the marinade, the better! I like to mix everything together in a mason jar. Place your jar in the refrigerator, but be sure to let it come to room temperature before serving. These are delicious as is, or serve alongside your favorite brand of olives, or as part of a meat and cheese tray.

Marinated Cheese

Marinated cheese is the perfect last minute appetizer. With only five ingredients, it's quick and easy to assemble and delicious to boot.

Servings 4 people


  • 1 packet ranch salad dressing seasoning mix
  • 2-3 tablespoons red pepper flakes add more for heat
  • 1 cup good olive oil
  • 1-2 tablespoons freshly chopped parsley
  • 1 8 oz. container of Ciliegine mozzarella cheese


  • Whisk together the first four ingredients until the ranch seasoning is well incorporated.
  • Pour the Ciliegine into a pint mason jar or bowl with a tight fitting lid. Pour the olive oil mixture over the cheese. Secure the lid to the jar or bowl. Shake the jar or bowl for a few seconds to coat the cheese.
  • Allow cheese to marinate in the refrigerator for at least eight hours, preferable overnight.
  • Allow cheese to come to room temperature before serving.
