Five More Fall Recipes (that aren’t pumpkin) . . .and Link Love!
Summer is over.
Fall is here.
It’s about to be,
pumpkins, pumpkins, everywhere.
Don’t you just love how I made that rhyme? Okay, so yeah. I’m a writer. Never claimed to be a great poet.
I don’t know about where ya’ll live, but it’s still HOT here in Mississippi. I just can’t get excited about pumpkin until at least October. I will let everyone else inundate you with all things pumpkin for the next three months. I am not going to do that to you, at least not yet.
So here is my second lineup of fall recipes that aren’t pumpkin. You can see last year’s list here:
Twice Baked Sweet Potatoes – if you need a new way to prepare sweet potatoes other than sweetening them with cinnamon and sugar, I suggest giving this recipe a try. The sweet potato gives this recipe a very rich and velvety texture.
Sorghum Caramel Corn – Mississippi holds their state fair in October, mainly because it’s too darn hot in the summer! Fair food always make me thing of fall and this homemade caramel corn is definitely a blue ribbon winner.
Fall Snack Mix – I like to munch on this snack mix after a workout. But have you ever noticed that once you eat something salty you start craving something sweet? This recipe covers all the bases.
Coconut Bourbon Sweet Potato Casserole – it’s sweet potato casserole on steroids and it’s to die for.
Twice Baked Rutabagas – I used to associate rutabagas with something boiled until there is no flavor left. They actually have a delightfully sweet flavor that is enhanced by the addition of cheese and bacon. It’s a wonderful low-carb alternative to potatoes.
And now for some link love! Here are a few fall favorites (that aren’t pumpkin) from around the web.
Skinny Spaghetti Squash Alfredo from The Comfort of Cooking. I have never been a big squash eater and I want to change that this year by trying some new recipes. This looks like a GREAT one to start with. And it’s healthy!
Stuffed Patty Pan Squash with Quinoa, Grass Fed Beef and Spinach from Amee’s Savory Dish. I see patty pan squash at my farmer’s market every year and I have always wondered what you do with them. I can totally see myself making a variation of this yummy looking recipe.
Herb Crusted Sweet Potato Bites from How Sweet it Is. Again, another wonderful savory way to cook sweet potatoes!
Caramel Apple Cupcakes from Kitchen Meets Girl. I always thought the best part of a caramel apple was the caramel, not so much the apple. I think it brilliant to take the best part and turn it into a cupcake.
Spice Apple Manhattan from The Dandy Life. Fantastic fall cocktail that I will be trying soon!
