Strawberries and Champagne Cheesecake

First off, congratulations to Christina of Heels and Meals!  Christina, you are the winner of Whitney Miller’s Modern Hospitality.  I will be sending you an email sometime today to get your address.  Enjoy your cookbook!

I don’t mean for the title of this post to be misleading.  It’s not like all the married ladies or all the committed relationship ladies can’t make this cheesecake.

Or the guys.  If you are a guy, you should totally make this cheesecake.  Your sweetheart will be so impressed that she might just make it worth your while.

But if you are a single lady, you should make this cake for yourself.  I know, I know, I’m a member of Team Holy Matrimony.  But I haven’t been married for so long ago that I don’t remember what it was like to be single on Valentine’s Day.  For the other 364 days of the year, you are perfectly fine being an independent woman.  Then February 14th comes along in all its obnoxious red and pink glory to make you feel completely inadequate that you don’t have a male in your life to buy you cheap chocolates and flowers that will be dead in two days.

Did I mention there is real champagne mixed into the batter?  The recipe only calls for a cup and the average bottle has about four cups.  Champagne is not something you can open and then save for later.  So what are you going to do with an opened bottle of bubbly?

You are going to go buy yourself a champagne flute. Because champagne is not meant for red Solo cups.  Just trust me on this.  Pour yourself a glass of champagne, cut a big slice of this cheesecake, and remind yourself that you don’t need anybody to buy you cheap chocolates or flowers that will be dead in two days to signify to the world how totally awesome you are.

Invite some friends over if you want.  But I’m warning you, this cheesecake is REALLY good.  If you decide to keep it all to yourself, I totally won’t judge.

 

 

Strawberries and Champagne Cheesecake

Ingredients
  • 1 cup Champagne or other sparkling wine
  • 2 cups chocolate graham cracker crumbs (about 14 whole crackers)
  • 2 cups sugar, divided
  • 1/2 cup butter, melted
  • 1 cup sliced fresh strawberries
  • 3 (8 ounce) packages cream cheese, softened
  • 1/2 cup sweetened condensed milk
  • 2 tablespoons cornstarch
  • 2 eggs, lightly beaten
  • 2 egg yolks
  • For topping:
  • 20 fresh strawberries, hulled
  • 1/3 cup milk chocolate chips
  • 1 teaspoon shortening, divided
  • 1/3 cup white baking chips
Directions
  1. Preheat oven to 325 degrees.
  2. Bring Champagne or sparkling wine to a boil in a small saucepan over medium high heat. Reduce heat to a simmer and continue to cook until liquid is reduced to 1/4 cup, approximately 8 minutes. Remove from heat and allow to cool.
  3. In a separate bowl, combine cracker crumbs, 1/2 cup sugar and butter. Press onto the bottom and up the sides of a greased 9-in. springform pan. Spread sliced strawberries over the bottom.
  4. In a large mixing bowl, beat cream cheese and remaining sugar until smooth. Add condensed milk, cornstarch and Champagne. Add eggs and egg yolks. Beat on low until combined. Pour mixture over strawberries.
  5. Wrap the outside of the springform pan in aluminum foil. Place pan on a baking sheet with sides or in a roasting pan. Place the pan on the center rack of the oven. Fill the outer pan with about 1/2-inch of hot water. Close the oven and bake for 1 hour to 1 hour and 15 minutes, or until and instant read thermometer inserted near the center of the cheesecake reads 165 degrees.
  6. Turn off the oven, but do not remove the cheese cake. Crack the oven door and allow the cheese cake to cool in the warm oven for 1 hour. Afterwards, remove the cheesecake, carefully run a knife account the edge of the pan, cover, and place in the refrigerator overnight.
  7. Remove sides of springform pan. Slice remaining strawberries arrange them over top of the cheesecake.
  8. In a microwave or double boiler, melt white chocolate chips and 1/2 teaspoon shortening. Stir until smooth then drizzle over strawberries. Repeat melting and drizzling with milk chocolate chips and remaining shortening.
