Beer-Battered Bacon-Wrapped Fried Dill Pickles
The Mississippi State Fair rolled into Jackson on Wednesday. Since then, my mind has been obsessing over fair food.
During the fair’s two week stay, the midway opens up for lunch. My office is within walking distance, so Friday the Husband and I met up to indulge in some deep fried goodness.
Like perhaps some deep-fried oreos?
Or how about a ginormous turkey leg?
Given that my husband loves corn dogs almost as much as he loves me, it should come as no surprise what he had for lunch. He was so anxious to sink his teeth into his footlong corndog that I barely had time to snap a picture. Remember what I said about him being a condiment lover?
I chose chicken on a stick. Oh boy! You can’t tell it from the picture, but there are fried onion and dill pickle slices wedged in there. I’m getting goosebumps just thinking about it.
It was a beautiful fall day to enjoy lunch on the fairway and people watch with the Jackson skyline as a backdrop.
I don’t remember exactly how I came up with this idea, but The Husband was the inspiration. It combines two of his favorite foods – well, besides corn dogs – bacon and dill pickles. It seems like a crazy combination, much like something you’d see in a booth on the midway. The beer batter recipe is one I have used for years to make onions rings.
If you like fried dill pickles, you will love these. It’s a combination of sour, salty, and smoky in a crunchy, crispy, fried coating.
| Beer-Battered Bacon-Wrapped Fried Dill Pickles |
- 2 cups canola oil
- Four dill pickle spears, cut into thirds
- 6 slices bacon, cut in half crossways
- 1 ½ cups all-purpose flour
- 1 tablespoon plus 1 ½ teaspoons seasoned salt
- 1 (12 oz.) can beer
- Heat oil in a large skillet over medium high heat. (I used a cast iron skillet).
- Wrap each pickle slice in one of the half pieces of bacon. Place bacon wrapped pickles on a plate, seam side down. Microwave for approximately 1 minute, until the bacon begins to shrink slightly around the pickle slice and will not come unwrapped. Set aside.
- In a medium mixing bowl, combine the flour and seasoned salt. Gradually pour in the beer, whisking out any lumps with a fork, until ingredients are combined. The batter will be slightly thicker than pancake batter. Toss pickle slices into batter until thoroughly coated. Working in batches, carefully add pickles to hot oil and fry until golden brown on all sides, about five minutes.
- Remove from oil and drain on paper towels. Sprinkle with salt if desired.
You could also slice a whole dill pickle into thick slices and use instead of pickle spears.

1. I love these photos! 2. State Fairs really are the best! a few years ago, Food Network Magazine did a special on the best State Fair foods around the U.S… most food is terribly unhealthy, but they are the signature foods you have to indulge in each time you attend a state fair!
